Instructions:
1. Cut 2 rectangular strips of scrapbook paper. 1 will cover the top of the egg carton's logo, the other will fit on the inside lid (approximately 11" x 4"). Round the corners on each rectangle. Attach one rectangle to the top of the egg crate with adhesive and one to the inside lid of the egg crate . With the remaining scrapbook paper cut a small rectangle (approximately 2" x 3") to add to the cover of the booklet you'll make in step #2.
2. Take a brown lunch bag and fold it in half length-wise. Trim the bottom, folded part of the bag to make a little booklet to add the muffin recipe or a card to.
3. Using the rest of the brown bag, stamp a "recipe" label on a long strip to wrap around the booklet over the small rectangle of scrapbook paper.
4. Again, using the rest of the brown paper bag, handwrite a message to go on the inside lid of the egg container. Use your own handwriting for a more personal touch (I started in pencil so I could erase if needed and went over my writing with an ink pen). Cut out your message with scissors and attach to the inside lid with adhesive.
5. Add a dozen mini muffins to the egg container, close lid and secure with kitchen twine. Add the little recipe booklet by punching a hole in the booklet and securing with the ends of the kitchen twine.
Ingredients
3/4 cups all-purpose flour
3/4 cups whole wheat flour
1 cup rolled oats
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
3/4 cup milk
1/3 cup unsweetened apple sauce
1/2 teaspoon vanilla extract
1 cup mashed over-ripe bananas (approx. 2 bananas)
Directions
Combine flour, oats, sugar, baking powder, soda, and salt.
In a large bowl, beat the egg lightly. Stir in the milk, apple sauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Add mixture to prepared mini muffin tin by rounded tablespoons full.
Bake at 400 degrees F (205 degrees C) for 6 to 8 minutes.
