Curried Sweet Potato Latkes

Sweet potatoes are easy to grow, and have attractive foliage. Unfortunately, you will need to dig up your plants if you want to use the tubers as a part of your Chanukah celebration.

Curried Sweet Potato Latkes Instructions:
Serves 6

1 pound sweet potatoes, peeled
2 eggs
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt, or to taste
1 teaspoon cumin
1 teaspoon curry
1/2 teaspoon pepper, to taste
Vegetable oil

Shred the potatoes in your food processor, or if you don't value your fingertips, you can shred them by hand. Set shredded potatoes aside.

In a separate bowl, combine eggs, milk, flour, baking powder, salt, cumin, curry, and pepper. Add the potatoes and stir to combine.

In a large skillet over medium-high heat, add 1/2 inch oil. Heat until it sizzles instantly when a small amount of batter is dropped in the oil. Place approximately a 1/2 cup of batter into the oil. Flatten the batter with your spatula, making a 3 or 4 inch pancake. Cook latkes for 3 to 4 minutes on each side, or until golden brown. Remove the latke and place on paper towels, draining excess liquid.

Serve hot with cranberry sauce or sour cream.
